Use in moderation
Great amount; for the price I expected a small bag. Aroma is very medicinal with a slight chemical scent(perhaps from pesticides/herbicides) If this is a concern I'd suggest shallow boiling some for a few minutes and changing the water out.For health reasons large amounts frequently should be avoided like many thing. Be aware these are woody roots and while boiling softens them if attempting to use a knife for cutting will prove problematic and dangerous practice patience and safety and use some decent kitchen shears (the type that are strong enough to cut through some small bones for $15-$25 will cut through it easily and safely. I've primarily used them for tea but method can be applied for cooking. Step one optional: quick boil allow to sit 10-15mins discard water. Step 1-2 (for tea)Add fresh water bring to a boil allow to sit for 30-45min add additional fresh dry ingredients and addition water if needed and allow to boil and rest again until all ingredients have hydrated and softened; I use an automatic shut of kettle however any method works for boil,rest,repeat. For cooking you can grind it dry with a STRONG spice grinder and add to dish as needed or added dry/cleaned whole to wet cooking methods and discard after dish is done whether it be a soup,stew,"curry" or to help flavor pasta and rice dishes. If using whole slices for meats/proteins you could make a strong "tea" by boiling a few pieces a couple of times and use that as part of a basting and or use a small amount rehydrated wrapped or stuff in things to be baked/roasted/broiled or grilled and removed. Great for thai dishes of course and its dry so there's no hurry to use it just not to put it in a resealable container after opening.

Been using this for years. Complaining about this product means that individual is not verse with Asian foods. Must sit in soup to acquire flavor.

The real thing, but not easy to grind
I began to cook Thai food, so I bought this. The roots are more difficult to chop or grind than the pieces we used in a cooking class. I used a small grinder, but it wasn't strong enough to deal with these - so I bought galangal powder from an Asian grocery.
