When I'm tired of eating meat and drinking shakes, this is a good alternative to get my protein. It doesn't taste like whole wheat pasta, and you need to develop a taste for it. Most sauces cover up the "different" taste.

Portion size pre-made: 12 oz/1 cupI let the water come to a rolling boil. Based on previous reviews, I stood right next to it and stirred. According to my stopwatch, it took less than 3 min. to finish how I like my pasta: not al denté but not mooshy either. This was perfect timing. So I suggest you watch it - it doesn’t cook like regular pasta.I’m not gonna lie: I’ll never tell you it’s exactly like semolina noodles, which we Americans are used to consuming. But if you’re looking for a healthier alternative and want to avoid spikes in your glycemic index, this is a delicious alternative.I’m not sure how it would do in casseroles and salads - I added my sauce and quickly ate it because I did not want it to absorb the liquid and fall apart. If I ever expiremented, I think I’d keep it separate and stir it in right before serving/eating. IMHO it wouldn’t hold up for any length of time - say, like in a potluck situation.

The fact that this is made from JUST ONE INGREDIENT is perfect for my carb-free diet. And it tastes FANTASTIC. I easily made a tomato-based sauce and it was delicious.

can't speak more about chickpea pasta
protein. flavor. all good. learn the proper cooking time. best to fill a pop fully and wait for a true boil or less you'll get earthy mush. don't walk away either. wait until pasta is al dente and cold rinse. if you're a first timer, mix it with half whole wheat pasta. cook separately. this will ease you in.

Better than expected
I knew it would be different than regular pasta and my family actually prefers the taste of it with certain recipes. We cook it a little longer than it says on the box so it is less chewy. The extra protein it adds to a meal is a definite plus.
