Yes, you can use as creamer. It's best to put the coconut milk in the cup first then add a little coffee (or hot water) to dissolve the coconut milk then add your coffee, otherwise the coconut milk will clump up.

I don't think so. It is in the configuration of flour. There are other coconut products that are more like a creamer. But like everything, you can try it. It would only cost a cup of coffee if you didn't like it.
