If you go to eichlers site they have a sizing chart that I've used in the past to determine sizing for my son and husband.

The strings are wool and are tied by hand in order for it to be kosher.

Do these contain a blue thread as Torah commands?

No And it’s not known today what is the real blue so white threads are fine
