7Cr17Mov is a mid-range to budget knife steel. It turns out there's a lot of discussion on the interweb as to its ability to hold an edge compared to higher carbon (more expensive) steel. I have some good quality Japanese knives so was interested to see how these stood up to everyday use in comparison. Out of the box the knives are very sharp as you would expect. They seem well made, with nice wooden handles that seem sturdy and comfortable in the hand. They have been manufactured to look like knives with folded steel blades, it's not mentioned in the blurb, so suspect that this is just an artifice - this is done with more expensive knives to mix 2 different types of steel with different complimentary properties. The knives did perform well in my opinion. They were used daily for 2 weeks in the kitchen. By the end of that period they had lost some of their edge and were due for a sharpen. This is not unusual though, even for the more expensive knives. A quick sharpen on a whetstone brought them back to their original state. Overall I have stuck with 5 stars for these as I think they are really good value. If you are looking for a kitchen knife and don't want to spend the big bucks, these will do the job perfectly well. They also look the business I guess.
