Q: I've seen that you cannot use a double click function with this mouse, is this correct and what would you use instead? Thank you

This not correct you can use a double click function on this mouse. If you look on the picture of this mouse there are three button on the top and one button on the left hand side of the mouse you double click the bottom button on the top that what I do.

Q: How is this for handwriting?

Not as good as a stylus ... however ... it has 3 DPI settings. If you move it 1/2": Setting 1 might move 3" on the screen, Setting 2 might move 6" on the screen and Setting 3 might move 9" on the screen. By selecting the tighter movement and "Zooming In" to your document in 2-3 goes I got to "not too bad" status. Much much better than a mouse. But yeah, two things, 1, click the top button to select the minimal cursor movement, and 2, Zoom in. Having said that I'm not sure I'd use it for "note taking".

Q: How does this compare to graphic tablets when it comes to digital drawing?

It feels very similar, allowing for the fact that it is sightly heavier, and you keep a button pressed rather than applying pressure to a surface. It becomes very intuitive very quickly!
