Will they eat/kill the springtails and grain mites in my hermit crab tank? Will these predatory mites die when there's no mite or springtails left?

They are safe in most cases. And they will bread long as it’s food Like organic matter for them to feed

do these eat russet mites?

No they do not eat russets . These mites reside almost exclusively in and on the grow medium. They are usually for fungus gnats and other larvae They will not go onto the foliage and start eating russets or regular spider mites . There's a different predator for those mites .
