Q: Do these brushes shed their bristles?

Very little but the bristle don't stay in shape thus gaps in the brush strokes. Had to but a more expensive and thicker brush. For a wile I used two brushes at once to get better coverage without the gaps

Q: Do these brushes work with oil painting?

I would not recommend them for oil painting.

Q: Can this set be used on stretched canvases to apply Gesso without bristles falling out?

The bristles on these are very strong. You don’t have to worry about them coming out.
