Q: Has anyone used this rice to make risotto? If so, what was the result?

In contrast to the other answer, you DEFINITELY can make risotto with this rice and it works quite well. I regularly make my wife's favorite mushroom risotto with this exact rice. When using it for risotto instead of sushi, the only change that I make is to not wash the rice before cooking, so as to not remove the loose starch that contributes to creaminess in risotto. Outside of a few other traditional Italian varietals, the koshikihari varietal is one of the best substitutes for Arborio rice in risotto and in fact has similar levels and distribution of amylopectin chain lengths.

These are the types of questions that need to be referred to Amazon since they hold the inventory. I can attest it is a high quality rice and really tasty. Would strongly recommend this brand.
