Just takes some practice.
EDIT: I was disappointed with this produce at first but the more she worked with it, the easier it got. She just needed to get the hang of it. Changing my review from ⭐⭐⭐ to ⭐⭐⭐⭐⭐.My daughter is currently using it for the first time abs it's not working out well. The (fettuccini) noodles aren't separating properly and it's just generally awkward and difficult to use.

Take others advice and steer clear of this device... Here is my input.
I had such high hopes for this. Despite the number negative reviews I thought I'd give it a try because ...after all this is Amazon and they'll return it. I bought it primarily to use on zucchini since I had a bumper crop this year. Here are the issues I encountered.1. It takes some cumbersome manipulation to load the zucchini. The blade needs to be moved out of theway and locked. But the plastic blade guard would not stay on the blade. I did not cut myself thistime but it would be easy to do if I used it a lot.2. The "easy grip" handle consists of a bunch of blades that stick into the end of the zucchini. Those blades are also very sharp and they stick into only the seedy center of my large and medium sizezucchinis.3. You pull a little lock and release the blade against the zucchini and try to turn the handle and the onlything that happens is that handle turns inside the center of the zucchini and rips out all the guts atthe end, so now you have no leverage to turn with.4. So on to another zucchini... This one was a bit smaller in diameter with handle positioned on the stemend. Still, the spring in the blade is so strong that when you release it, it digs into the zucchini so hardthat it stops it from turning. You can try to start it by putting your hand in the middle of the deviceand turning the zucchini itself but then you risk cutting yourself on the blade. Again...guts gone, noleverage.I did not try this on a zucchini of small diameter because I want large sheets like in the pictures. It might work on a small diameter uniform width zucchini. Probably would have to peel it first...which is why the pics don't show peel on the zucchini. In Synopsis... This thing does not work well on med & large zucchini. Which makes this device totally useless as far as I'm concerned. Anyone with a garden knows it's very difficult to get small zucchini... I only bought it to try something new with my bigger ones....the pictures were so convincing !

Love this little foodie tool! Easy, fun, and versatile!
I really love this little foodie tool, and we are having a lot of yummy fun with it! The Vasta is really easy to use, and my husband and I have been making lots of yummy things with it! So far we've made Apple and Potato Roses in Puff Pastry (which I will be making again very soon!), Cucumber "Maki" Rolls filled with Tuna Ceviche, which were delicious, Cucumber Roll Appetizers filled with mozzarella, basil pesto, and prosciutto, and Zucchini "Fettuccine" Noodles, which we sauteed agli olio (in garlic and oil), and also served with tomato-sausage sauce and fresh herbs! And the things we've made were so pretty that I took photos! The Vasta is easy and safe to use, as the blade is hidden, and it is different from a Mandoline or a Spiralizer, as it makes sheets and flat noodles out of your veggies and fruits! It really is great if you want to get more veggies and fruits into your diet, as you can make veggie and fruit crepes, wraps, noodles, burritos, maki- all sorts of things!

Peeling first is critical
My first attempt using this was complete failure. I tried making sheets of a zucchini and the knob just shredded the zucchini and it cut nothing. The second time I peeled the zucchini and it was amazing. It just peeled off sheets of zucchini. Once you know how to use it, it's a wonderful tool if you want to reduce pasta but love "pasta like" dishes. Made wonderful cannelloni. The the product is 5 stars; the instructions are 2 stars.

It's an ok product, but not exceptional
The pros-*It makes nice sheets for lasagna or enchiladas. I dont have any other products that do that.*Potatoes work nicely in itThe cons-* Its a lot of work to make noodles in comparison to the peeler I have that just slides down the zucchini like a potato peeler.* It only takes certain size zucchini. We had to cut them to fit. The large ones didnt work because the prongs stuck in the soft part and didnt hold it because it's too soft. So only small zucchini worked without wasting a ton of the vegetable. All in all it's just ok

Absolutely fantastic sheets, fettuccine, and spaghetti fruit and veggie noodles
I love the Vasta Veggie and Fruit noodles maker. It is tricky in the beginning to figure out. It is essential to read ALL of the instructions and watch the user videos. I first used a baby cucumber and at first had trouble with it because it didn't want to stay on the spindle. Then I realized I didn't have the actual holder/spinner attached. It's amazing how much better a product works when you actually use it correctly. Once I attached the holder/spinner (it's in its own box), I turned my original 3" baby cucumber into a beautiful long noodle that used the cucumber up all the way to the middle. It makes great apple noodles, too. I loved the results using the fettuccine and spaghetti noodles as well! I have created several recipes so far!

Don't waste your money!
This thing is ridiculous to clean, hard to use, and a huge waste of zucchini and money! I use zoodles for all my pasta needs and saw this and thought, ok that would be nice to be able to make some lasagna noodles with zucchini for a change... trust me, do not waste your time! I'm lucky I didn't lose a hand while using this thing! Not only do you end up wasting 1/2 of the zucchini (yes, half or more) but if you get the veggie sheet roll or whatever it's called then you're lucky! I had 4 zucchinis and ended up only being about to get about 2 - 1 foot long sheets. The rest was mush or messed up slices, it's just horrible. Please trust me, save your $20 and go buy and mandoline slicer and use it instead, you will get better results and it will be much easier to use, and you can most likely walk away with all of your fingers when you are done.
