These recipes work and they are delicious!
I met this chef at Cayman Cookout in January 2023. After he told me that it’s available on Amazon, I snapped a photo of his cookbook, returned home and ordered it. I have already made 3 separate recipes and they all were delicious! Two other vegan cookbooks from a highly rated, sophisticated vegan restaurant cannot compare. Those recipes don’t work. In sharp contrast, Chef Doug McNish has written a thorough, easy to follow collection of recipes and hasn’t left out vital steps. Bravo!(Bangers & Mash, Anytime Gravy, and Un-Chicken Noodle Soup)

Great cookbook for new and seasoned vegans!
This is a perfect cookbook for new vegans who want to make familiar meals, and for seasoned vegans who are looking for recipes to serve their omnivore friends and family. The recipes are easy to follow, and I love the pictures (something I consider a definite plus when looking at cookbooks!). Great book to add to your library, and the Fish and Chips is delicious!

Great Flavor and Technique but Quantities are Off
I would recommend this cookbook for the terrific flavors and also technique. Simmering seitan and tempeh in various broths before frying or braising worked very well. But many times the quantities are off, WAY off. I LOVED the Baked Crab Dip and the Buttermilk Fried Chicken. The Hickory Smoked Ribs were pretty good but the cooking time was not nearly long enough and the pan size was way too small. The Fish and Chips (using tempeh) was delicious but needed a lot more water in the batter just in order to mix it. The Whipped Butter is really easy compared to Miyoko Schinner's butter but is almost as delicious. This recipe alone will save me a small fortune because I won't have to buy vegan butter anymore. The Cashew Mozzarella is delicious but I doubted that it needed a whole half cup of agar. That is a lot! I only used 4 teaspoons and it is firm but not rubbery like mozzarella is. So I could be wrong, maybe it takes that much agar to recreate mozzarella. With all the pros and cons of this book, I still LOVE it. It has interesting anecdotes and great pictures too.Edited Jan 26, 2021The Nacho Cheese Sauce is spectacular. Better than nonvegan nacho cheese sauce, by far. Tonight I made the fried pickles (Crispy Dillies) and the breading is hearty and wonderful. The No-Beef Stroganoff is also excellent. It includes a tiny amount of cumin which is peculiar for stroganoff, but this lent a wilder, meatier flavor that was unexpected. This is a cookbook like none I've tried, as far as vegan cookbooks go. It is not perfect, but the flavors are.

Really creative way to have your comfort foods.
Wow! What a great book! My hat off to the author who, as a chef, has created wonderful vegan versions of various comfort foods—including items like deviled eggs and calamari. As someone who enjoys eating vegan from time to time, I have had delicious vegan meals that are also creative. However, I love that these recipes are for comfort foods. While many of the ingredient lists may be a bit lengthy, if the ingredients are set up ahead of time, then the preparation phase should go smoothly. In addition, the author provides tips for cooking and stocking a vegan pantry as well as beautiful photography that you should not look at while hungry. For the person who is already a vegan, this book provides the opportunity to create meals that will rival the regular comfort foods enjoyed by those who are not vegans.Whether as a gift or for personal use, for the vegan or the person who likes to have alternative meal choices, this is a wonderful book to possess. I look forward to its publication.I voluntarily reviewed an Advanced Reader Copy of this book provided by the publisher and Net Galley. However, the thoughts expressed are totally my own.

Title of book is misleading
I attempted the Fettuccine Alfredo and there was nothing classic about it. A quart of sauce containing two tablespoons of dijon mustard for a pound of pasta makes for a runny, unnaturally tasting food. I'll return this book to the library asap and go back to youtube for reliable (tested) vegan recipes.

The books really well done
Amazon keeps bugging me and sending me emails for this review. We haven't cooked anything out of it yet, but I've gone through all the recipes and we've already have a whole bunch picked out that we're ready to try. The book is really well done the beginning tells you all the ingredients you'll need for all the recipes and so on. if you're interested in this kind of lifestyle or just interested. What a great way to learn how to make some comfort foods!
