Differences between the 4 in 1 and the 2 in 1...

The 4in1 would usually be used to replace a normal kitchen tap and provide mains hot water, mains cold, filtered cold and filtered boiling. The 2in1 is a standalone tap that would usually be installed alongside a normal kitchen tap and provide filtered cold and filtered boiling.

What temperature is the water kept at in the tank? (the given daily standby cost seems too cheap to maintain very hot water 24/7)

The water is stored at boiling point, however the tank is extremely well insulated so it doesn't remain 'on' for most of the time. The water is heated to boiling and the tank then switches off and stores it at boiling. It only then switches back on to top the temperature up when it does eventually drop. It only needs to be on for a tiny amount of time to top the temperature back up and then it switches off again.

How is the pressure relif operated? To waste or through tap into sink?

The boiler has a pressure relief valve built in. The system is supplied with a vent assembly which connects to the sink waste, so the system vents into the sink waste.
