Q: How are the 2 plates used

The two additional plates are to build up the inside stamping plate to accommodate thicker to thinner stamps. Clear stamps are usually much thinner than red rubber stamps, and you need to add or subtract the plates so your stamp comes in good contact with your card stock.

Q: How do you take the paper off of my Petuna? It has brown on the inserts inside too?

The "brown" insert should not have any "sticky" on it, as it is only for building up the space under the clear gridded cover plate. Your paper should not stick to the brown layer. I use repositionable tape to hold my cards in place while I stamp them. I hope this answers your question.
