This is the key to mile high biscuits that aren't bitter
Through the years, I loved to bake homemade biscuits and shortcakes. To make these properly, it takes quite a bit of baking powder. The problem I encountered was that they ALWAYS ended up with a bitter aftertaste, no matter how much sugar I added. Come to find out (40 years later), the culprit was my go-to supermarket baking powder. I'd always grab the one that was most available.... usually the most inexpensive one (ok... always the one that was the cheapest). To be fair, I think most people do this and are none the wiser.A few months ago I was looking through different baking blogs. Low and behold, I was fed a small bit of information that lit up that lightbulb above my head. The reason my biscuits had that bitter taste is because of the aluminum in most baking powders. I suffered all these years (in silence), and all I needed was to use a better ingredient (isn't it always that way?). By using this aluminum free product, my baked goods have been 100% better with no bitterness, minus an ingredient that's really not good to ingest. The biscuits have also beenUpon receiving my container of baking powder, I checked the use-by date. The date was well past one year. This is important because if your baking powder isn't fresh, you'll end up with flat, hockey puck type biscuits and other baked goods. Right away, I grabbed my phone and put a reminder on my calendar, about a month before the expiration date, so I'll know to reorder this. I'd hate to be caught off guard, where all my efforts to make a great meal would be spoiled.Lastly, the lid from this baking powder comes in handy. It has just enough room to allow a tablespoon measure. Then, there's a leveler so you know you're getting the exact amount your recipe calls for.

I love this baking soda and have used it exclusively for years. I was very disappointed to receive a container with a normal screw on/off top as opposed to what is shown in the product photograph. What is shown is a top with a flip up feature that enables you open up "half" of the top and reach in with your measuring spoon and level it off on the straight edge. That is the style of top I have historically received, so I didn't think twice about putting the empty container in the recycling bin before receiving the new container. Unfortunately, it is too late to recover that empty one now. Seems like a small thing, but after years of receiving that style of top, this is just annoying & inconvenient. The product photo should be updated to reflect what they are selling.

What to know if you bake
I did not know ( and was SLOW to believe ) that baking powder ( & soda ) often expires, or more correctly looses its ability to full rise baking items BEFORE the expiraation date. I read that on a popular baking site But after baking a batch of muffins, I noticed they had not rose up as nicely as my last batch. Hmmm. So I baked another batch, being extra careful with all measurements ( by wt) . Same issue. So I posted a question in the comment section. Sally baking addiction .The answer was " your baking powder or soda may still be within the use before date, but it possibly lost some of its power. So I bought a new one and sure enough the rose up into nice domed peaks. I bought this brand b/ c of the much better protection against moisture. Plus easier measuring too.PS. I never take a kick back or promotion reward for ANY of my reviews. Either i like the product or I don't.

It’s aluminum free
Excited to use this for my tamales, the label on front doesn’t mention “aluminum free” but the ingredient list shows it doesn’t contain sodium aluminum phosphate or sodium aluminum sulfate, so that’s good. It got high marks from America’s test kitchen and impossible to find at my local store
