Back Oblaten - A Flavorful Journey
The Pfeffernusse recipe I was willing to try came with “braveness and patience“ attached to it.The Recipe Notes says, “Traditionally,the dough ripens for 4 to 8 weeks.”Considering I had never baked anything like this before, I was reluctant about waiting 4 to 8 weeks for the dough to " ripen,” so the family didn't encourage me to invest the time either.Nonetheless, we all want to enjoy the baked goodies as soon as possible!I let the flavors get customized with each other for one week, and I made a note.It can be intriguing to see how different flavors interact and evolve over time.Back Oblaten is a type of German dessert wafer thinly shaped like a disc;they are available in different sizes and flavors, including vanilla, hazelnut, and chocolate.Unfortunately, I didn't particularly pay attention to the Oblaten size when looking over the recipe, although the recipe had the correct Oblaten size.So I bought two packages of 70 mm instead of 50 mm, and despite purchasing the wrong size of Back Oblaten, I needed to make the recipe work with the resources I had. It meant I had to think creatively to adjust the filling I used to fit my larger Oblaten.To achieve a more uniform dough portioning resulting in evenly-sized cookies,I weighed 37g of dough for each Oblaten, and I baked 32 Pfeffernusse in total.For clarification, If using a larger Back Oblaten, there is no impact on the taste or texture of thePfeffernusse cookies, regardless of making adjustments or blunders, the outcome can still be delicious and visually appealing.The taste of homemade Pfeffernusse truly is fantastic. The lemon-glazed flavor adds a tangy and refreshing twist, while the delicate crunch of the spice-infused cookie provides a delightful contrast.There are warm, aromatic spices with each bite and a comforting and cozy sensation.It's a symphony of flavors and textures that will leave you yearning for more.I have many ideas to match the plenty of Back Oblaten left over, and I can use them in various ways.For example, the Oblaten will provide a crispy base for meringue cookies.Coconut macaroons are delicate enough and would settle best on Back Oblaten.A scoop of favorite ice cream between two Back Oblaten would make a delicious treat,and rolling the edges in chopped nuts would add texture and flavor.There is no boundary to creativity! Nonetheless, the discs have a shelf life of around three years if stored properly in a cool and dry place; I bought mine over a year ago.Overall, the experience taught me the importance of paying close attention to the details in a recipe,but also the ability to seek inspiration and problem-solve when necessary.Without any prior knowledge of the German tradition or the anticipated outcome of this unique and delectable creation, I courageously ventured into uncharted culinary territory by attempting a brand-new recipe. So, have fun experimenting with Back Oblaten, handle them delicately, and enjoy the beautiful treats you can create. Perfect for lebkuchen
These sturdy wafers are the perfect touch when baking traditional Bavarian lebkuchen cookies. Great for Lebkuchen
Lebkuchen ingredients aren’t always easy to find in the US, so I was happy with the price, quality, and shipping speed of these oblaten. As a bonus, the oblaten I ordered in fall 2022 don’t expire until 2024, so pretty long shelf life as well.

4 stars because the product is authentic but very expensive compared to getting these in Germany. I understand the reasoning but it’s fair to point that out.
