The label on the serrano sauce says refrigeration is recommended but not required. Don't know about the other flavors.

Q: The spout (which typically with this type of lid you cut off the tip yourself) came already snipped off, is this normal?

The tip is cut off at the end but the bottle has a very secure seal that must be removed before you can pour the sauce. You can also cut the tip to make a larger hole.

Q: Used as a substitute in recipes, how much would equal about half a serano?

I'll be honest I didn't even think to think how much serrano in a teaspoon. I just dump it on my food (salads as well!) and if needed it I add more. I just love the taste and the hotness that didn't even think of quantities.
