This knife is thick and sturdy to scrape through butter. The butter curls sometimes don’t stay on the knife, but it’s works.

Makes cold butter spreadable
I got this because I remembered seeing the original concept years ago, and thought it was a great idea. This is a minor improvement over that design, but an improvement nonetheless; it does exactly what you want it to, scoring butter into thin, spreadable ribbons.

Confusing Knife
I sort of was excited to try this knife. But, my enthusiasm went away pretty fast as it is actually a very confusing knife to operate. It is a 'tool' but what to do with this tool is hard to master given that there are no instructions. If you open and throw away the cheaply made retail box, then you won't remember which end is supposed to do what. The knife is rather well-made though so the quality is OK.

LOVE this knife!
I honestly got this because we keep our house cooler in the winter and our butter is always rock hard! I don't like having to use the microwave to soften it for toast, and this special knife is PERFECT! It cuts thin strips of butter that will easily and quickly melt into toast - or whatever you want it to. I tried it on refrigerated butter as well as frozen butter. The frozen butter was slightly harder to slice into ribbons, but still totally do-able. I don't know when it would be needed, but it will cut very soft butter into ribbons, too.The knife's circular-holed edge is sharpened so it will only cut well in one direction - easy for a right-hander, but a lefty could probably adjust by cutting away rather than towards themselves.I tried the curling feature at the tip of the knife, and it worked pretty well, too, although I doubt I'll ever use it. I also tried to use it to cut ribbons of cheese, and it worked every bit as well as on butter (see the video). I think the strips would be nice in salads. If you want cheese ribbons to be more equal, position the knife over the "bumps" on subsequent passes.I'm giving this knife five stars because it remedies a frustration I've had for YEARS. There's no comparison between scraping the butter knife of the top of hard butter and using this knife!
