In Search of Perfection: Reinventing Kitchen Classics

Only wanted it for sausage recipe!
I bought this because I remember when the TV series was on and I’ve always wanted to make my own sausages. I haven’t got around to it yet, but I’m keen. I won’t be making his gravy because he puts in around 500g of the sausage meat in the gravy which seems like a mad waste!Essentially, it’s a mega geek’s exploration of favourite recipes. I’m not really interested in the rest. One good tip I remember from the tv series was cooking pizza on an upturned iron frying pan. It does give a deliciously well cooked base and heats up much, much, much faster than stone. I nearly ruined the enamel on my lecruset pan! I opted for a modern girdle in the end... a flat piece of cast iron without vertical handle.

Fun but impractical.
This book is great to read . It contains a fair bit of interesting food history on the classic dishes we all enjoy. The recipes contained within for remastered dishes though all just seem to have one or two elements that put you off actually making them your selves.I guess with a little planning and determination you could make it as he does. Search the shops for the right kind of potato at the right time of year. Get a blow torch . Cook 18 hours.I like the idea of these things but lack the will power to make my own sausages. There are however many ideas in the book that can be pinched to add a little extra to your own cooking even if you don't reach perfection.

Heston, such a great food writer
I ordered this and the other perfection book for my son as I already have them, I can thoroughly recommend them and his Fantastic Feasts book. When you read his description of eating proper burgers your mouth waters, delicious.

Absorbing!
I bought 2 copies of this book to give as birthday gifts to 2 young men. I like Heston, but he'd seemed to have gone a bit off the wall lately. Curiosity had me open one of the books - you know the kind of thing - to flick rapidly through it? - I couldn't put it down! Not just interesting, but fascinating!! I watched with some amusement as the recipients of each book had the same experience!! I can honestly recommend this book for all ages too!!

A peek inside Heston's mind
Great book. Some interesting recipes but also good to get an understand of why "good ingredients" are so critical to his cooking.Has made me want to use higher quality ingredients from now on, and really think about the origins of what I'm eating.
