Perfect for cooking
This is my favorite olive oil. It has a fruity flavor that speaks of its true olive origins, yet it is full bodied and perfect for cooking. I've enjoyed it for several years, and after a move to a retirement location where it was not available in stores, I was happy to begin ordering it from Amazon.

Clean, smooth, buttery olive oil.
After all I read about phony Italian olive oil, and my own bad experiences buying high priced, but bitter and astringent oils, I picked up a bottle of the Terra Delyssa at a local store. The price was almost too good to be true, but that flavor was outstanding.It's not the most complex EVOO, but the flavor is complimentary to just about anything. It's suitable for frying without turning fishy or bitter, has a clean, full bodied, buttery note. It has a subtle peppery flavor as well.There are better olive oils, but the price I paid, about 24.5¢ / oz, it was by no means expensive. This is my go to kitchen oil, particularly for middle eastern dishes where I don't want to clash with the flavor.

It tastes bitter
I am not really a fan of this oil. I normally buy Cobram Estate, which tastes great and isn't bitter.

Light and neutral
Since I found this oil locally and at a bargain price I am going to confine my review to the product and leave variables like price alone.I have some favorite brands of olive oils, and also have preferences regarding their origin. For example I love Spanish oils even more than Greek or Italian ones. What sets this one apart, though, is its near neutral flavor. For some uses that is a detriment, but for others it's a major plus. It has the prized bitterness of a good Italian or Greek oil, but the after burn is slight and there are no dominating flavors or aromas. For example, I often use oils from Liguria because I love the grassy flavor, but this one is more neutral. For some dishes where I want other flavors to rise this is the perfect oil.Physically the color is a light amber and the subtle influences in the bouquet are hard to discern. That is yet another indication of the neutrality. Thus far I have used it in cooking (browning garlic), drizzling (over both gorgonzola cheese and feta), and dipping. It's best over gorgonzola where it allows the hay like nuances of that cheese to dominate, and for dipping as long as you infuse it with herbs. It also worked well with browning garlic because it did not interfere with the garlic itself. It was a little boring over feta until I chopped in some fresh oregano.As I said, this is not for every dish, but when you want a good olive oil that does not get in the way of more nuanced ingredients this is worth checking out.
