Cream of tartar (potassium hydrogen tartrate) is one component of baking powder along with bicarbonate of soda. It is also used in baking to add volume to meringues and creaminess to frostings. Cream of tartar is a by-product of winemaking, derived from the crytals that form inside wine barrels and precipitate out of some wines.
