The best, healthy flour!I can't do regular American wheat flour because of inflammation, but this sprouted whole grain wheat flour works for me. The sprouting process removes some of the inflammatory elements. I mix it half and half with whole grain rye flour and make sourdough, then refrigerate the baked bread before eating to increase the resistant starch as much as possible. That makes a loaf I can eat without followup pain! It does make a dense loaf so keep that in mind. You won't get the high, fluffy rise of processed white flour, but it still bakes up a nice, flavorful, healthful bread. Do a long cold ferment to get the best flavor.

Love this flour. I made peanut butter cookies and felt so good about choosing a healthier flour. Use a recipe for this kind of flour.

So, I received a single 5lb bag - the listing says in the title that it will be 4 x 80 oz (5lb) bags. The price was about right, maybe slightly high, for a 5lb bag, but if it’d been 4 x 5lb bags it would have been quite the deal! …it is not.I do love this floor for bread. It makes my home bakes so tasty! This is the only reason I didn’t remove any stars for the listing error.The bag I received expires in 8 months from the time of receipt. It took 3+ weeks to get here for some reason, but it finally arrived ok. The packaging also doesn’t match the pictures in the listing, but the product is correct. It seems they haven’t updated the listing very well.

I use this in my Peasant Bread recipe which I make several times a week. It adds extra nutrition and a bit of nuttiness to the bread. It's great quality and is easily digested. Highly recommend!
