Q: I had one cube in the middle that rose to about 4 inches and two that didn't completely freeze any suggestions

I have also experienced one cube rising higher than the others. Don't have a clue as to the reason. I have not had an issue with some not freezing completely, however.

Q: Can you use this for other liquids than just water?

I don't see why not. BUT, there will a lot of waste. I would say roughly 3/4 of the volume is discarded after you separate the ice mold.
