Q: Why does your cutting board have a California Proposition 65 warning about exposure to cancer causing chemicals?

This is a question best proposed to the manufacturer of this product, not other purchasers. If I had to guess, this wood is treated to prevent deterioration and increase longevity. These chemicals in the wood perhaps could be compromised through hot water in dishwasher cycles, or deep gouges, or any number of things. It’s best to ask the manufacturer for further details.

Q: What oil do you think is best. How often should it be oiled?

I bought Ironwood Gourmet 28122 Butcher Block oil when I purchased this cutting board. As soon as I took the board out of the box, I treated it 3x over a 24 hour period. That seasons it before use. That said, I treat it after each use that involves having to wash it. Don't ever let the board sit in water. Wash it with warm sudsy water, dry it immediately with a towel and treat it with oil. It will always look beautiful and last for a very, very long time. Also, I have a very large butcher block topped table. I use Mineral Oil FOOD GRADE SAFE for that. It comes in 32 ounces. That would work just as well as Ironwood's product which I suspect is the same thing only with a little bit of orange essential oil added to it. If I didn't have the large butcher block table top to treat, the smaller Ironwood bottle would be more than adequate to last quite a while. I love this cutting board!

Q: How large a turkey can this board hold? What is the largest item you've carved using this board?

I have never used it for a turkey, but it is a solid and substantial board and I imagine it could handle as large a one as you buy!
