Q: Which is best for opening raw oysters?

I own 2 of these knives. A 4" Boston and a New Haven style. I prefer the Boston for oysters. The thinner blade is better at penetrating the hinge. The straight blade does a good job of separating the flesh from the flat (top?) side of the shell. You can't tell from the pictures, but the New Haven blade has a ~30° bend ~5/8" from the tip. I prefer this knife for cherrystone size clams.

I have been shucking oysters for almost 50 years. My best suggestion is to get a couple of different blade styles and try. This way you can find the one that best works for your style. It won't be a waste of money, because each style work well. you'll just find one you reach for most of the time. I usually go in through the side. I have found I need to sharpen the tip a little to get through the shell's split. If you go through the hinge, any will work because they are sturdy enough to pop the hinge. I've read a couple and they say don't sharpen because you'll stab yourself. They need to learn how to shuck. I have never stabbed my hands while shucking oysters.

Q: What's the difference in each 5 options? Boston, Galveston etc.

Each variation has a different style blade. The blade width, length, and profile are specific to each style. Basically, which one to get is mainly just personal preference as each style will work perfectly.

Q: Are these blades intended to be sharpened right out of the box? I noticed it's about as dull as a flathead screwdriver.

Oyster knives aren’t supposed to be sharp. If you’ve ever shucked before it’s really easy to stab yourself which hurst even with a dull blade. Do not sharpen this.
