Q: why does it say there are 5 sizes but only sell 2 sizes on here???

No idea, for me I was happy to find there #1 because I use a lot of 2-3oz leather and it works well. But I also have a #2 and 3

Q: i thught i was buying the whole set, thats my bad. But i didnt want a #5 i need the #1 and i dont see you listing one though you say you have 5 sizes.

You will have to get that question answered by the maker. Mine is hard steel because it keeps a good edge for a long time. That’s what is important. I’m a old welder and machinist for what its worth.
