Hello! Yes, you can control how hot the sauce is. There is a Scoville chart that tells you the spice level of each pepper. Also, each recipe specifies the heat level. Hope this helps!

It will definitely be fine. I bought mine back in January and just made another batch two weeks ago. All the peppers are dried so if the box is kept on a cool dry place you should have no problems.

The peppers are dried. I would say they have 3 months of shelf life. Possibly 6. You can always soak them in water to rehydrate them though.
