Question 1

Other company's pizza stone reviews say that they break. How can I be sure yours does not have the same problem? I want  something that will last.

Yes, we have had broken stones, I would have to believe a lot less broken stones than other companies. The shipping folks throw them around like frisbees sometimes. The difference is that as a small business, I take care of my customers and am only a phone call or an email away. When a customer has a problem,  i send them a new stone, no questions asked. If you read the reviews, you will see that I take care of customers and while this is straight out of my profits, it has generated a lot of goodwill for my company. I buy online all of the time and I have found that not many companies will answer the phone or respond to an email. I answer the phone, I answer the emails, I am the owner. I treat people like I want to be treated. I am proud of my customer support  and I often tell my 5 daughters that if they ever want to go into business, you have to treat customers with respect and with honesty. After all, isn't that what life is about?

Can it be sprayed with water in the oven while hot

Accepted Answer

Yes, this is the only stone on the market that can withstand that type of treatment. There is a video that shows a Thermarite stone being taken out of the oven and having ice dumped on it with the accompanying steam. It is in the review by Katie Smith if you are interested. To my knowledge, this would break all other stones. A bit of caution, water in a hot oven may warp the bottom of the oven, that can happen if there is too much water on the bottom of the oven.

What is this made of?

This pizza stone is made from a very high quality proprietary blend of minerals mainly consisting of cordierite. Cordierite is a magnesium iron aluminum cyclosilicate which occurs naturally in contact with peltic rock formations. It is also found in conjunction with granite magmas and a host of other geological formations. With the geological stuff out of the way, we use it in our product because of its superior durability when used in high heat applications such as kilns and of course pizza stones. It is certified safe to use by the USDA, the EU, ROHS testing and  German LFGB testing.  Cast Elegance selected this as our product because it is very tough and will not break like the last 3 stones I bought. As the owner, I use it in my home  to cook pizza and bread to feed my children - it has to be tough and it has to be safe or I wouldn't use it!

I have never cooked on a pizza stone before, what suggestions do you have for getting started?

CastElegance will send you an email with a 31 page recipe Ebook attached.  The recipes are easy to make and are quite delicious.  Read the Care and Use section carefully.  It is important to know that a WET stone will not work and a COLD stone will not work!  If the stone is wet, dry the stone in the oven at 450F for 60 minutes before using.  Always preheat the stone for 30 minutes before putting food on it.  Never wash with soap or any chemicals and never put the stone in the dishwasher.  If you follow these basic steps you should have great results.
