Al Johnson's Swedish Pancake Mix

I cut the recipe in half & it yielded 10 thin pancakes made in a 10-inch nonstick crepe pan, using a 1/4 measuring cup to measure the mix per pancake. While the pan was nonstick, I did do a quick wipe of vegetable oil in the pan at the beginning, then added butter in between the frying of each pancake. I didn't want to chance them sticking! The 10 thin pancakes were topped with syrup and smashed blueberries and made a nice breakfast for 2 adults with a side of bacon. Definitely not too filling like when we normally make thicker pancakes. While obviously the taste & quality is not exactly like the pancakes at Al Johnson's Swedish Restaurant, they do nicely until I can make it back there for another visit. I do not know that this pancake mix is necessarily better than other pancake mixes, but going forward I will only make pancakes in the crepe pan for a less dense pancake that doesn't absorb all the syrup to the point that I keep adding syrup. Giving 5 stars since the mix delivers a nice tasting pancake per the instructions; it is what it says.

This mix is okay, but doesn't have the distinctive feature that makes Lund's pancake mix taste like the ones my Swedish grandmother made long ago. This only has regular flour, not the malted barley flour that seems to be essential.

I had a craving for Swedish pancakes so I ordered this and Lingonberry jam. The box was for single use but it would’ve made too much for one person in a single sitting so I just cut the recipe by 1/4 and still used one egg and it was wonderful, quick, and easy. I will order this again.

As a Swedish decendent and loveing Swedish food,and not having the time it takes to cook it right...I was happy to find the Johnson products,..Swedish pancakes for 20,no I couldn't possibly do it....until I found Johnson's pancake mix...Wow,it was a success tasted like I spent the day putting it all together myself.,Danka (sp)

As good as what we had at Door County this Fall. Ligionberries were perfect... only thing missing was the goats!

This is fantastic, after spending years in Sweden this is the real thing.

Just as good as when we had them in Door County.

The instructions on this are for the ENTIRE BOX! Who on earth can make that many Swedish pancakes at once?
