This is one of best gluten free bread flours available next to King Arthur. Your bread will come out like regular gluten free bread. Soft texture, yummy taste. Even the house smells wonderful! This is not an easy feat! Better Batter is a staple for me now as a gluten free foodie.

First time using this
I tried this upon a recomendation and I liked it. I used it for some baked goods and it was better than a previous brand I was using. I will purchase again because it is good quality and tasted good in the things I baked.

Pretty good substitute for wheat flour
After researching different types of gluten free flour, I ended up ordering a bag of Better Batter. The bag itself could have been made better as after I opened the large bag, the bag seal is so thin, it took a while to actually close it. You may need to just use a separate container. The bag contains instructions of how much flour is needed to replace a cup of wheat flour; however, for lazy bakers like me, I find that you can easily replace a Better Batter cup for a wheat flour cup. The gluten free scones I made turned out pretty much the same as the moist and flakey wheat ones I would make regularly for my family. The Better Batter flour definitely makes it harder to form the dough though. Right after getting the scones out from the oven, it was more crumbly than the wheat flour so I suggest leaving it on the pan to completely cool which will slowly harden/form a bit for you to pick up.Now on to the taste, the scones tasted more like mochi scones than regular wheat ones. The texture is also slightly more glutinous than if you used wheat flour that would give scones a more drier/bready texture. If I get the chance, I would try to make the ratio a bit more exact to see if that would change anything but most likely, it won’t because you are using rice flour so it’s naturally going to have that texture and taste.Overall, all the gluten free friends that got some of these scones really enjoyed them. I wouldn’t call this an absolute substitute for wheat but it’s definitely good for those that have the dietary restrictions.

Can't tell it's gluten free!
My husband is gluten sensitive and has been diagnosed for about 15 years. Gluten free has come along a long way in that time. Since he is gluten free, most of my cooking is done that way so he can be included in all that we eat. We had given up a lot of different foods during that time since either it wasn't made in a gluten free variety or it tasted horrible. One thing I had a really hard time with was flour. It was so complicated to make a flour because you would have to buy a variety of flour and you would need xanthum gum. The different kinds of flours were not also typically available at the supermarket that I shopped at and I would have to go to a specialty store to get what I needed. That also created a large expense for me and my family. So as a result, I didn't often use flour that often. As time went on, I found some flour that was acceptable, but many of them had an aftertaste and could also be identified by others as tasting different. Enter Better Batter. This was a flour I found out about from a blog I had been reading. I researched it and found it was available on Amazon. The price turned me off somewhat, but I decided to go for it. I was SO glad that I did. I will never question it or hesitate to buy it ever! This is THE BEST TASTING FLOUR I have had. I use it for everything now. I made the chocolate chip cookie recipe on the box and they were the most delicious cookies I have ever had. No one had any idea they were gluten free. I also use it for beef stew when the beef needs a flour coat first before searing. I tried it with Christmas cookies this year since my husband loves those peanut butter blossom cookies. I made a large batch of them and they disappeared quicker than quick. They were so tasty and like the chocolate chip cookies, no one noticed any difference. Even my father, who can spot gluten free from a mile away had no idea. This flour is the BEST!
