Great flour
Love this flour! I use it for making sourdough bread almost every week. While it's a little more expensive than American grown flour, I think the quality is higher and it has worked well in everything I've baked so far.

wow what a difference it made
I sometimes bake cookies and small cakes using all-purpose-flour (King Arthur)but time to time, my cakes or bread would come out really chewy.I then saw one recipe saying that it needs soft flour and I was like, "what is soft flour?"then realized it's the flour with less gluten, more suitable for cakes and crispy cookies.I wish I figured this out earlier cause today I baked a matcha pound cake using a random recipe onlineand wow the texture is exactly like the ones sold at bakeries.So light, soft, fluffy on the inside (what cake should feel like) and crunchy (not hard but light crunches) on the outer layer.I was so impressed and surprised by the difference it made.Although I wish the price was lower here on Amazon but then again, most food (and some items) are more expensive online since the prices include shipping.Besides the price, there's really nothing else to complain about.I love how it's all organic with no use of pesticides, GMO. I highly recommend this brand for making cakes and cookies!

All of our food is low grade. This flour is like clouds. So smooth. So soft. So good! No allergic reactions.

Good when it's priced correctly
One of the reasons this flour works so well for people with gluten sensitivity is that American flours are processed with bromide (poison!) in order to increase shelf life. Italian flours are not. People may not really be gluten sensitive at all! Just poison sensitive - imagine that.That this flour has now almost tripled in price is gouging. I have bought from this seller before. You got two bags for $10.99. Now one is $12.99.
