Works Perfectly for Me
Cuisinox Egg Separator / B0082ANSJAI bought this little baby for Christmas when I wanted to get more into backing pastries (and brushing crusts with egg whites). I've used this separator dozens of times and it has worked perfectly for me each time. I place the separator on a drinking glass (just like in the product picture), crack the egg into it, and the whites seep out into the glass.Now, I will note that some of the fresher eggs have whites that don't want to seep right away -- they aren't runny enough and are too thick to run through the holes on their own. In those cases, I lift the separator just enough to get my fingers under the metal, and I grab the whites (which poke out heavily through the holes) and "pull" the white slightly down. This always works for me and gets the whites to run out like they should.I always use extra large eggs, and they fit in this separator just fine, but it should be noted that you're only meant to break one egg at a time in here -- you need to dump the yolk into a separate bowl/glass before adding another egg to the separator.~ Ana Mardoll

Good compared to other egg separators, but not good for doing volume...
Compared to other egg separators, it's better than most. With that being said, I think this one could be improved.To be fair, I eat a gross amount of eggs, about a dozen a day. I like to separate the whites out and was sick of doing the crack, pass the yolk back-and-forth in the shell thing. So, I bought a cheap plastic separator. That was a huge mistake and was what led me to buy this one.PROS:As far as how sturdy it is, it's great. It's built very well and is easy to clean. Also, it's form fitting around a glass which is probably good for people who only have to separate a few eggs at a time.CONS:It really does not separate the whites out very quickly or easily. I've probably separated 500+ eggs in mine so far, and I would say that about 20% of the whites actually detach from the yolk and immediately drop through the little slits in the bottom. The other 80% of whites you pretty much have to swirl the separator around to get the whites to detach from the yolk. It can sometimes take 20 seconds or more per egg to accomplish this. Even worse, doing this will sometimes break the yolk and send it straight into your whites and it's virtually impossible to separate a broken yolk from whites, defeating the entire purpose of the separator.To make a long story short, this separator is a better option than doing it by hand or the cheap plastic ones. Where I think it's a good application is for those people who only need to separate an egg or two at a time. For people like me, who do a dozen or more at a time, this really does leave quite a bit to be desired.

Hefty little gadet that works well
I'll keep it short. As a fan of the egg white omelet, I would often create breakfast using 8-10 egg whites. This little gadget does exactly what it claims to do - it separates eggs perfectly well.If I would re-engineer this thing, however, I would make the bottom reservoir larger in diameter than the yolk collector on top. I've found some really large eggs to overflow the top before the egg separates so I end up having to place the entire gadget in a bowl first to collect any overflow.Additionally, I would like the yolk collector to handle more than 1 egg at a time. It would be nice if you could just crack 5 eggs into the thing and have it do its job but it doesn't.The unit works perfectly well if you crack a single egg into the container, wait for the egg white to slowly separate from the yolk and drip into the bottom reservoir, dump out the yolk and repeat the process. If you are handy in the kitchen it's almost quicker to just do the in the half-egg shell back-and-forth separation method.All in all it works perfectly as intended. If I wanted something that will separate 5 eggs at a time I should have bought something else so there is no reason to knock this model at all. It works and it is one sturdy little gadget - solid stainless steel and heavy for its size. Well made.

A Must-Have for Frequent Souffle or Hollandaise Makers
A few years ago, I learned how to make dessert souffles which my family raves about. The most difficult part was separating the egg yolks from the whites. Not impossible, mind you, but if you break one yolk into the white, you have to start over or the souffle won't rise. This separator does as advertised - easily leaves the yolk in the top, while, with a few jiggles, the whites stay in the bottom. I've never had a yolk break with this separator. It is compact, so easy to store, and easy to clean. Highly recommended.

Ouch!
Ok, this thing has one heck of a sharp edge on the receiving cup. Second egg, one cut finger. And it wasn't like I wasn't being careful. I've been a welder of steel since 1976. Cuts here and there by various metals and shavings, but to be an iron worker and be cut by a little egg separator? Don't tell my buddies. To add to the quality, or at least the efficiency of the product, well it's rather sloppy and a bit slow. Goops of egg white attach to the "spoon" and can't escape due to the way the cup is under the spoon. The cup sort of catches the egg white on it's side and holds onto it kinda like that bugger you just can't seem to flick off your finger. Maybe if the sharp (finger cutting) edge of the cup was curved inward into itself so I could use it as an edge, like the serated ones on box of a roll of plastic wrap.

Does what it says
I like eating raw eggs yolks but don't eat the whites. This thing does the job perfectly. It's stainless steel, heavy duty, and the cup separates from the receptacle for easy cleaning.

Very Nice looking not as practical as expected
I bought this for myself at the beginning of a bit of a baking spree. I will say it is very nicely made like all Cuisinox products I have. I just found it a little less practical than expected due to the fact the egg separator piece is quite firmly connected to the cup so after you separate the egg you have to wrestle a bit with the top to get to the yolk. Very nice looking with a real feel of quality.
