Curry in a hurry? YEP! (with a nod to Nigella)
I've always loved green curries but until I saw Nigella's "curry in a hurry" video I'd never thought about making it, and as it's usually too spicy for me to handle often. Not so when you make it at home! This is a gorgeous shortcut to a delicious meal, and let me share how I make it even quicker and with less effort than old Nige! I bring home a rotisserie chicken and strip off the meat. I use frozen or canned peas (Le Sueur!), roasted red peppers and anything else on hand that sounds good that day. Make a batch of rice (I use Jasmine rice) and when that's sitting with the cover on for the final 10 minutes, heat oil in a deep skillet, add the full jar of green curry paste, one can of full fat coconut milk (reduced is just waters it down and will not taste good at all), some coconut aminos to taste, a pinch of sea salt, and if you like a slightly sweeter curry you can add a bit of your sweetener of choice as well. Let that all bubble and simmer, as you add the thawed/decanted/drained veg, shredded chicken, etc. Cover and let simmer at lowest heat to allow the flavors to release and mix slowly. By the time the rice is ready, you should be just about done and ready to serve! Of course, like most curries, stews and casseroles, it's even more delicious a few hours later so I eat a modest portion and come back later, lol. You can vary what's in this, make it spicier, etc, but that's our go-to and has been for about 12 years now. We keep this, coconut milk and rice on hand so I can whip this up anytime and it's ALWAYS a huge hit. Great for cool nights, especially, or for a really nourishing lunch. Thank you Nigella, for bringing this easy, delicious meal into our lives!

A little goes a long way
This was my first time trying green curry and I was pleasantly surprised! I used it to make Thai green curry soup and the flavor was immaculate. It only takes a small spoonful to make your dish burst with flavor. This small jar will last a while!

Like this Vegan Thai Green Curry Paste...
Does not taste like "authentic" Thai Green Curry. Though 3 chilli symbol on the sticker shows as "hot", the curry paste is not spicy, for an Asian. Hence 4 stars. The batch (4 oz bottle that I bought) seemed to have more of Cilantro/Coriander and light Ginger. Cooked Thai Green Curry with onion, carrot, slices of Red bell Pepper, sliced fresh tomato and 100 ml full fat coconut milk. Taste was good, though not spicy. Used this cooked Thai Green Curry as side dish with dosa/pancake, Naan bread, chapathi/Roti, Upma, etc. It worked out well.

Need to add to crank up the flavor
Curry flavor is a little bit bland. I’m growing peppers in my yard as well as Thai basil and other herbs so I’m gonna put the paste in a food processor and add more pepper, basil, ginger, and other herbs to crank up this taste on it just a little bit otherwise it’s pretty good and way easier than trying to make at home

Quality
I have been using this product for several years and it is consistently good. For some unknown reason the grocery stores I normally shop at have stopped carrying the green curry and only offer the red. I was so happy to find it on Amazon and the price was even better than at the grocery store.

Tiny jar.
Be sure to read the size. Pictures look like their regular jars, but you get this one and it’s dinky. Only 4oz. Expensive for the amount you get. Five stars if full-size for the price.

Our family likes this one a lot. We go through one jar of this every 2 months. The simple suggested recipe included with it is good as well. You can of course make better curries from scratch, but for a packaged product and for the ease of making it, you really can't beat this one. We've tried other packaged curry mixes, but this one is our favorite. Would buy again!
