Q: Is the rubbish included or do we have to fill it with our own rubbish?

You have to provide your own. This is a very classy bin so we only use it for quails egg shells, champagne corks, empty caviar pots and the occasional smoked salmon wrapper. Silk bin liners work best. 🤪😌

Q: What is the width, depth & hight of the bin?

Dear Sharon, Sorry for the delay in responding. Bin measurements are: Width - 33.5 cm, Depth - 26.0 cm, Height - 71.0 cm. If the size is what you are looking for, I don't think you will be disappointed. The bin is well-made, looks good in the kitchen, and has the best open/close touch system we've ever had - so easy to use. Best wishes

Q: How tall is the bin with the lid open - we need it to fit under a breakfast bar?

92cms. You could get rubbish in with the lid partially up - my level is 87.5 cms - but unless you can slide it out you would have difficulty changing the bag

Not familiar myself with "pedal bin" versions. However, the touch-bar version works extremely well for me - the lid stays up until you are ready to close it once your hands are empty. If you are serious about being worried of getting plate scrapings down your leg ? - then surely as it is taller that is less likely to happen!!!. Strange question but hope my answer may be of help.
