Does this come with stainless steel rivets or aluminuim rivets ?

Rivets are usually aluminium otherwise you could not peen them over. Stainless steel would be too hard and would need a hammer. These are soft aluminium that can be squeezed with the hand tool.

Can i use this with metal

Metal is what it's designed for! I use it to attach stainless steel pulley saddles to the aluminium mast on my boat and it works a treat.

are rivets man enough to join cog changing arm on a front derailleur

I’ve only used it on a fixed handrail. Not sure if rivets hold on moving parts . The website contact is very user friendly.

What clearance does this riveter require? I.e. what's the distance between the front of the head where the rivet goes and the back of the head?

From anvil to back of head, 86mm (3.3/8") not including the actual rivet which varies depending on the size used.
