Does having in closed container promote mold?

I'm not sure about the mold. The containers do have holes near the bottom to allow air in. I live in Florida and have no problem with mold.

Why does it have to say “Vintage Storage” on it ... can anyone tell me if you can scrape off the lettering?

The lettering is slightly raised so you may be able to scrape it off. Honestly, I never noticed it said that until I read your question. This lettering is quite small. I love my canisters and am very happy with the way they look as well as their functionality.

How much flour does the canister hold

It can hold an entire bag of flour.

Can I store these in the garage?

If you have a ckimate controlled garage you may be able to. Mine would be to hot. Remember potatoes like a cool dark place for storage. I will tell you that this canister keeps the potatoes much longer than other containers I have used. I actually have sprouts on some but still no rot.
