Can you separate the middle bar to have to bars? Or do they have to stay attached?

Yes, the middle, stability bar can be removed. You are able to use the dip station with or without it.

At the 35inch setting are these tall enough for someone over six feet? Full range dips, inverted rows etc.

I'm 6'2" and when I dip down so my elbows are at 90 degrees I still have a good 5 to 6 inches under my knees. It's enough to even do weighted dips as long as the plates don't hang too far below your knees.

What is the diameter and circumference of the grip part of the top of the bar and then the non-padded part?

The tubes are 1 1/4" in diameter and the padded grip is just barely thicker than that (maybe 1/8" thick?). It's a good size; not too big to grip and not so small that it will dig into your hand, even when doing weighted dips.
