I love sweet and salty combinations like Kansas City-style barbecue sauce. This sauce is similar in consistency and color to dark molasses. It's even thicker and slower, due to the black soybean starch, and completely opaque, almost black. It can take a few minutes to pour out a quarter-cup when it's stored in the refrigerator. I have a simple all-purpose teriyaki sauce that calls for brown sugar and soy sauce (with fresh garlic, ginger root, lime juice or rice vinegar, and I replace the brown sugar and soy sauce with this variety of kecap. It's also great for making Korean-style BBQ sauce. I was able to travel to Indonesia for work some years ago, and this is one of the cooking components I became addicted to. This packaging is lovely, because I just washed out my old bottle and poured this in. It took about 15 minutes because the pouring cutout on top of the bottle only allows a very slender funnel, so be sure you're prepared, or you'll make a mess, as I did.
