Are the electronics isolated well enough that the unit can withstand a bit of dew in the morning? Will humid environments harm the sensor?

These last few mornings we have had a very heavy dew here - in fact two days ago even a frost. The one thing I noticed is that it takes more light in this situation for it to think that it is "day" and so it is likely to spray even if it is past dawn. Perhaps the sensor gets a little obstructed by the dew ? But other than that it seems to be working fine.

Is the tripod too high for effectiveness on turkeys?

No it is about 11/2 feet off ground.

Is the framework metal? Can the stand be set low enough for wild turkeys?

The framework is metal, and yes, you can set it low enough for your turkeys. We have used it for deer, and it has worked very well.

Can you adjust the sensitivity? I want to target deer but not gray squirrels.
