How many beignets does a box make?

What kind of oil is recommended?

I used avocado oil! Really any cooking oil will work.

Can I transfer this to a glass jar without refrigerating it? Or once opened must the mix be refrigerated?

No refrigeration needed after opening the box. I like the glass jar idea which I think I will use as well. :)

Do these need to be served right away? I would love to make these for a school event but not sure if they will be yummy cold?

They are best served warm. If you make at home to take elsewhere be sure you have a large rectangle pan and stack no more than two high. I use an ice cooler with towels as insulation to keep at least at room temp.
