If the highest memory supported is 2600Mhz why buy ram with higher speeds?

Higher ram speeds are overclocked (they operate at faster frequency (mhz) than stock). Usually higher speeds = better performance. For example, if you buy a 3200Mhz memory and put it on your motherboard, it will set it to factory default 2133Mhz (not overclocked). Now this memory has a built-in "XMP Profile" (Google this), that you can set on your BIOS to automatically overclock to 3200mhz

Will this fit on my old p67 Sabertooth mobo?

The best CPU you can upgrade to is the Core i7-3770k. You will have to make sure the BIOS is updated before you attempt to upgrade to a 3rd Generation CPU. Your p67 Sabertooth is an LGA 1155 motherboard but the Core i7 8th Gen processors belong to a modified LGA 1151 socket, which only works on 300 series motherboards. These 8th Gen processors will not work on z270, z170 or any 100 series or 200 series LGA 1151 board. Usually you just had to match socket types but in reality you need to research the specs of your motherboard to find the CPU upgrade list. This will tell you what CPU is compatible with your motherboard. In some cases you might have to update the BIOS/UEFI in order to ensure compatibility.
