Can you choose what flavers you want and do you git five 1lb bags

I chose the variety pack offer. But, you can purchase individually.

What is the shelf life? Small batch guy here.

Shelf life is pretty much forever if you package it back up and place it in the freezer. I vacuum pack the balance and then place it there.

Do do they come packed in ice?

They do arrive in a chill pack.

Can you freeze this cheese?

Yes, you can freeze this cheese. It actually keeps it fresh.
