Will this work with Bose s1pro speaker?

Yep, it works great With the S1. That’s what I bought it for and I’ve already used it a few times.

Is there a way to just replace the stripped screw only or will I need to purchase a whole new stand?

Go to Loews, Home Depo or your local hardware store and replace your stripped hardware

The description says the speaker stand is expandable but I haven’t found a link to additional sections to make the stand taller. Any help appreciated.

Expandable isn't the right word. It's extendable. There aren't any additional pieces you can buy to add to it. You adjust the height by loosening the top clamp and extending the post. There are holes every 4" through which you insert a pin to keep the weight of the speaker from collapsing the pole. You may be able to skip the through-pin if your speaker isn't heavy, but I wouldn't. You can also vary the height somewhat based on how far you expand the legs.
