Are these waterproof? I have a job were my feet would be wet most pf the day

You might be able to use a spray to help them resist water but they are not water proof.

How water resistant are they, will they stand up to rain and puddles?

I haven’t worn these out in the rain much yet, but we treat our leather shoes with Saddlers One Step conditioner. It is water resistant, and does a great job. They have 8 oz spray bottles and 16 oz spout bottles on Amazon. It does however darken light colored leather.

I have hard plastic inserts with they fit in the regular or wide version?

The padded inserts that come with the shoes just slide in and are removable. Take your inserts to a shoe store and try them in a pair of shoes. You don't have to buy them there.
