Q: Has anyone used this to can one jar at a time for small batches?

I don't see why you couldn't if it's a quality pot it should withstand being on the stove with hot water for the time it takes the can a jar also your jar would be sitting inside the steamer thing so it wouldn't be sitting on the bottom of the pan so it should be safe that is my opinion. If anyone has any good reasons to share that would explain why you couldn't when it meets the same standards as a water bath canning pot please post.

exclude the handle: outer diameter 16.8cm, height 21cm

Q: Could I use this to deep fry french fries on the stovetop?

I haven't tried yet. Myself, I wouldn't do it. Like to keep water/oil pots separately, just my personal experience and preference.
