Yummy, but takes a LONG time to cook!
Seems like I've seen quick-cooking farro in the supermarket -- and I would recommend it. The package listed here has no cooking directions, but after looking around on the web, I boiled it, covered, in lots of water -- about 3 c. water per cup of farro. It took at least 45 minutes. It is slightly chewy and quite delicious, esp. if you like bulgur or wheat berries. I ended up cooking big batches and freezing it in single-serving ziploc bags.

Healthy Food
We are raw vegan and try to eat 85% raw and 15% cook. We also combine the two. Farro is an excellent source of protein, fiber, complex carbohydrate food. We mix it in with our cooked food and our raw salads. We do not support the Standard American Diet which contributes to 99% of diseases today. We don't need a medical insurance but rather a health insurance. Incorporating this into your diet helps you towards your goal for healthy foods. Enjoy!

Try farro for your next salad or pilaf
It really did not take so long to cook; maybe 15-20 minutes in simmering water or broth. I put it in a salad with roasted grapes and roasted red onion mixed with kale and a red wine vinegar dressing. The salad was great. The farro was chewy something like wheatberries; very nice.

I use this grain regularly-and LOVE it!
I use Emmer in both grain salads as well as ground into flour in breads. I boil it in a lot of water (more like pasta than cooking rice), and when it's chewy but not crunchy, I strain it. Pour it into a large bowl and add nuts, dried cranberries, chopped apple, carrot, roasted beets, goat cheese or cheddar cheese cubes. Kale, spinach and arugula are delicious tossed in as well. Cubed butternut squash went into one salad and that was a big hit too! Really, you could add any kind of nut, cheese, fruit or veg to this and it'd would likely be delicious. And so good for you! And filling! And portable-makes a great lunch or potluck contribution.If you're a baker, try Emmer flour for breads. It's light and fluffy, but full of whole wheat goodness. I use half Emmer and half bread flour. If you have a grain mill (such as a Nutrimill or Country Living Grain Mill), you can just grind your own to retain the most nutrition.Give Emmer a try! You won't be disappointed!
