Review: Bread form nailed it. - I have a few proofing baskets, but this one is a bit different. It is like a pressed cardboard so when you flour it, the flour actually stays put. It also, helps when you need the dough to release. Also, when you use your fingers to press the flour into the basket, you don't run any risk of getting poked by some errant sliver from traditional baskets.

I also liked the "ecological" aspects of it (made from wood pulp that is grown near to the manufacturer, rather than imported cane). I've used it several times to make sourdough, and it performs well. I line it with a tea towel and a hefty dusting of flour. The dough I use is fairly high hydration, and it proofs nicely in this basket. I'm going to purchase a second one so that I can proof two boules at once.

I have a few proofing baskets, but this one is a bit different. It is like a pressed cardboard so when you flour it, the flour actually stays put. It also, helps when you need the dough to release.
