We roast a breakfast blend, medium roast, and dark roast with them so far. The dark roast is extra smokey at the second crack, but the flavor is what you expect of a dark roast as well. When roasting it first gives a wet-grass kind of smell when it goes from green to yellowish and the moisture starts to exit some. The first crack to a light medium, the bean expands nicely and the husk comes off and flakes away nicely. In the second crack the bean expands again and darkens dramatically. I mostly use Brazilian and Colombian beans so far. I just know them and roast them more than other regions, but getting to know your been profile takes time and practice.
