The texture is firm and dense and it breaks into chunks instead of slicing cleanly. The crystals create tiny crunchy bursts when you bite into the cheese.The flavor is extremely concentrated and complex:This Big Cheese 13-year aged white cheddar, has an intense cheddar flavor, is sharp, but not simply "spicy" with rich, nutty notes, toasted butter flavors and a caramel-like sweetness.
