Use 2 heaped teaspoons for 1kg of chicken is about right as the paste is very salty and highly spiced with a lot of heat, you can add more if you prefer it hotter. Use a tin of 400ml of coconut milk (check that it has about 70% coconut extract) for a more creamy taste and texture to your curry. Add 1/4 teaspoon sugar to balance out the spices to your dish. Bought beginning of July 2020, expiry date 24/12/21. Will keep longer if stored in the fridge. The thick paste is in a tough see through bag inside a plastic tub, so storage is no problem. The paste is quite pungent, if you get it on your hands it is easily washed off, though the smell can linger. We have used jars of ready Thai green sauces that have been very acceptable but they have been quite expensive per meal and the texture is not quite right because of the maize starch added.
