IIII is preferable by many (including me) because they find it makes the face more aesthetically pleasing overall. It also makes it easier to read considering the organization of numbers on a clock/watch face is very different compared to the left-to-right sequence presented in writing (for this reason the French king Charles V demanded that the IV on the clock tower of his palace be changed to IIII).
